Microwave Chinese Tomato Beef
















Chinese Tomato Beef

2 pounds beef steak sirlon, round or chuck
2 tablespoons sugar
1/2 cup soy sauce
1 clove garlic
1/4 teaspoon garlic, minced
1/4 teaspoon ginger
3 tabslpoons oil
2 large peppers, cut into strips
3 green onions, chopped
2 large tomatoes, cut into wedges
2 tablespoons cornstarch
1/4 cup water

Slice steak diagonally across the grain in 1/8 inch slices.
In a 2 cup measuring cup combine sugar, soy sauce, garlic and ginger.
Remove meat from marinade.
Pour over meat into a 9 inch baking dish.
Marinate the beef at least 30 minutes, turning occasionally.
Preheat browning dish (I just used a baking dish not preheated since I do not have one)
Add oil and meat to dish.
Cook 5 to 6 minutes, drain cooking juices into marinate.
Stir in pepper and onion into meat.
Cook 3 to 4 minutes, stirring halfway through cooking time.Top with tomato wedges.
In a 1 cup measuring cup combine cornstarch and water and blend with marinade. cook 1 to 2 minutes, stirring meat and vegetables and heat 1 to 2 minutes.
Serve over hot fluffy rice.
