Indian Corn

This only uses only five ingredients and is a very quick meal after a long day at work. I used a black bean salsa for this meal. I put jpepper cheese on top. I think some lettuce and cut up tomatos would make a nice addition. You can add or change ingredients as desired.

1 pound lean ground meat
1 (16 oz) can whole corn
1/2 onion , chopped
1 (12 oz) jar of taco sauce or salsa.
Cheese (optional)

Brown meat and onions, add corn and sauce or salsa. Simmer for 5 minutes. Serve with torilla chips. Serves 4 to 6.

Basic Skillet Meal

Ingredients:

Cooked Rice
(Optional Browned Meat)
Soup
Beans
Veggie
Cheese


Combine all ingredients and simmer in a large skillet until hot.

Tater Tot Casserole

This is a popular recipe that has been around for a long time. I have seen all types of varations. It also freezes well.

1 1/2 lbs of browned and drained ground beef ( or turkey)
1 or 2 Family size cans of cream of chicken or Mushroom Soup
Bag of Tater Tots
Miniced onions

Brown the meat, drain. Put in sprayed dish. Mix soup and just enought water to thin over the ground meat. Mix in onions if desired. Put tater tots on top of casserole. Bake until hot and bubbly at 350 degrees F for around 30 minutes or so.

Serve with salad and buttered bread.

Variations:

Add 1 1/2 cups frozen peas
Add can of mixed veggies.

Lasagna Cucina


This is a simple but good Lasagna. I do not like pork so I use a sausage made form beef or use
ground beef.

Lasagna Cucina

main dish, pasta

1 8 oz package lasagna noodles cooked
8 oz mild italian sausage
1 14.5 can ready diced tomtatoes; dtained
2 6 oz cans Italian tomato paste
1 cup water
2 cubes beef bouillon
1/2 teaspoon dried basil; crushed
1 15 oz container ricotta cheese
1 large egg
1 12 oz mozzarella cheese; shredded and divided
