Crunchy Oven Fried Fish


This is a low fat oven fried fish recipe. I put some mango chutney on top of the fish and it tasted very nice. Be careful that you do not overcook the fish so it stays moist and flaky.


1 pound fresh or frozen white fish fillets
1/4 cup all purpose flour
1/4 teaspoon salt
1/4 teaspoon lemon pepper
1 egg white
1/4 cup fine dry bread crumbs
1/4 cup cornmeal
1 1/3 teaspoon finely shredded lemon peel

Thaw fish, if frozen.

In a shallow dish combine the flour, salt and lemon pepper.

Beat the egg white until frothy and set aside

In a shallow dish combine the bread crumbs, corn meal and lemon peel.

Dip the fish into the flour mixture and shake off excess. Dip in the egg white and coat with the bread crumb mixture.

In a shallow baking pan sprayed with nonstick spray place fillets coating side up..Bake at 450F for 6 to 12 minutes or until fish flakes easily with a fork.

Serve with lemon or lime squeezed over it or serve with mango chutney as I did.
