New Potatoes and Peas

It will be a few more weeks before I can have this springtime fest from my potato patch. New potaotes can be cooked in their thin skins or can be gently scraped with a knife so that only the thn shell is removed. I was asked the other day why I bother to grow potatoes when they are so cheap itn the store. New potatoes are why. They are not cheap to buy! Just picked peas are great too. I can eat them raw freshly picked. They are so sweet!

12 small new potatoes
3 cups fresh peas
1 teasspoon salt
brown butter or white sauce

Cook potatoes in a small amount of water until almost soft. Add peas and cook just until they and the potatoes are tender.


Spoon into serving dish and pour brown butter or white sauce over.

Servings: 4-6

White sauce



2 tabslpoons butter or margarine
1 1/2 teaspoons flour
1 1/2 cups milk

Melt butter or margarine. Stir in flour to form paste. Gradually add milk, stirring constantly over heat until smooth and thickened.
