This is a popular Pakistani smoked meat dish. This is why the charcoal is placed in the dish before placing in the oven. I am planning in the future to playing with the recipe by adding liquid smoke and seeing how it comes out. Adjust the amount of green chillies acording to taste or how hot you prefer the dish.
8 oz onion
1 1/2 cups yogurt
2 tsp heaped ginger paste
2 tsp garlic paste
few whole green cardamoms
1/2 bunch mint leaves
6 green chillies
2 tsp red chillies
salt to taste
2 tsp corriander powder
1/2 cup oil
one piece of coal
Blend 4 oz onion with a little water. Add ginger garlic paste along with salt, chili powder and coriander powder and then blend well.
Mix the blended ingredients with mutton. Add 4 to 6 cups of water and cook until the meat is tender and water gets reduced.
Add the oil and fry the meat untill the meat is coated
Beat yogurt with salt
Mince the rest of the onion green chilies and mint leaves
Prepare a heat proof dish and lay a layer of meat then of yogurt and top with the green masala repeat the process untill the ingredients are used
Light a piece of coal and put in the center of the dish. Cover immediately and put this dish in the oven and cook for 1/2 hour.
Serve with Naan or white rice.
