Evil Jungle Prince Chicken

Keo’s Thai restaurants in Honolu, Hawaii have are sone of the best Tai restaurants I have been to. Thai is a wonderful cuisine offering a variety of choices. I tend to avoid any of the peanut based sauce myself but there are so many different choices to enjoy in tai cuisine. Beware, however, some of the dishes can be very hot. This Keo’s Thai recipe is a perfect example. This chicken recipe used a cocount based sauce with lemon grass which is very typical of Southern India and Thai cuisine.

Evil Jungle Prince Chicken
Thai - Keo's Thai Cuisine



1/2 pound boneless chicken breast
2-6 small red chili peppers
1/2 stalk fresh lemon grass
2 kaffir lime leaves
2 tablespoons oil
1/2 cup coconut milk
1/2 teaspoon salt (or substitute fish sauce)
10-15 fresh sweet basil leaves
1 cup chopped cabbage


Thinly cut chicken into 2-inch strips. Grind together red chili peppers, lemon grass and kaffir lime leaves in a food processor or pound in a mortar. Heat oil to medium-high and saute pepper mixture for 3 minutes. Stir in coconut milk and cook for 2 mi nutes. Add chicken and cook for 5 minutes or until cooked. Reduce heat to medium-low. Stir in salt (or fish sauce) and basil. Serve on a bed of chopped cabbage.

Makes 3 to 4 servings.
