Beef Stroganoff

This is an easy recipe that we enjoy. I do not measure anything myself but here is the amounts the recipe uses and I also use round steak instead. It was summited by Mrs William Gargano in the 1976 GET SMAKELIJK cookbook.

1 lb. sirloin steak 1/4" thick
1 (10#/4 oz) can beef consomme
1 clove garlic, peeled and cut
1/2 cup water
3 Tablespoons flour
1/4 teaspoon pepper
1 teaspoon paprika
1/4 cup margarine
1/2 cup onion, chopped
1 lb. fresh mushrooms, sliced
1 1/2 teaspoon salt
1/2 cup sour cream

wide boiled noodles, rice or mashed potatoes

Rub both sides of meat with garlic. Cut meat into strips 1 1/2" x 1". Mix flour, salt, pepper, and paprika. Add meat and toss lightly until strips are well coated. Reserve remaining mixture. In heavy skillet, heat margarine, add meat and brown well. Add onions, cook until transparent. Add liquid. Cover , cook slowly about 1 1/2 hours or until meat is tender. Stir occasionally. Remove cover and continue cooking until sauce is slightly thicken. Before serving add sour cream. Blend and heat through. Serve with noodles , rice or potatoes.
