This is sort of a college survival food type of meal. It is good in a pinch when you need something fast and cheap. I have also used beef sausage. This meal will really only serve about two of use so with my family I double the recipe.

Ragin' Ramen

main dish, pasta

4 cups water
2 packages ramen noodles with seasoning packet
2 cups assorted vegetables or 10 0z package
1/2 cups cooked chicken, beef, turkey or fish

In a large saucepan, put water on boil.
Chop fresh, thick vegetables like carrots and broccoli into small pieces.
Tear or slice leafy vegetables like cabbage and spinach. Chop green onions.
If using chopped frozen vegetables, leave as is.
When water boils. Add vegetables(except onions) and cook for one minute.
Add noodles, breaking if desired. Cook on medium-high for 2 minutes. Add
meat or eggs. If adding eggs, beat them together in a separate bowl and add
to hot soup, stir until cooked (about 1-2 minutes). Remove from heat and
stir in one seasoning package. Add other package if needed for taste. Serve
with green onions on top.
