This is a recipe I have had for a very long time and I have finally got around to posting a picture of it. I really think I could almost eat Mexican food every day and this Enchilada have to be one of my favorites. This recipe is another favorite. I used to make it another way which was very good but now that I have discovered this recipe this is how I now usually prepare it.
