Turkey/Beef and Black Bean burgers with Enchilada Sauce

The bean dip makes a very moist patty. Turn the patties very carefully or they may fall apart because of the moisture.

1 lb. ground meat
1/2 cup black bean dip
2 tablespoons ketchup
Salt and ground pepper
Non-stick spray
1 can (about 10 oz. red enchilada sauce)
1/2 cups shredded Cheddar Cheese

Mix the ground meat, bean dip, ketchup and salt and pepper in a large bowl until blended. From into 4 burgers. Heat a large skillet over hight heat for several minutes. Spray the burgers with oil and brown on both sides.

Add enchilada sauce, reduce the heat to a simmer and until the sauce reduces to glaze, turning the burgers several times to glaze evenly and cook through. Top with the cheese; cover the pan and
cook until the cheese melts, 1 to 2 minutes.
