Today since it was still too hot to really cook I decided to microwave instead.
Ingredients:
1/4 cup prepared mango chutney
1/2 teaspoon garam masala
1/4 teaspoon ground ginger
1/4 cup olive oil
4 teaspoon balsamic vinegar
4 boneless skinless chicken breasts
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 mango peeled and diced for garnish
2 tablspoons chopped greeen onions for garnish
1/2 cup toasted slivered almonds, for garnish
Combine the vinegar, spices in blender or food processor until smooth. Add oil in slowly. Set aside
Season chicken with salt and pepper. Place in 9-inch square glass microwaveproof pan . Cover with wax paper. Microwave on high for 4 minutes. Rearrange chicken and microwave another 4 minutes on high or until chicken is cooked through.
Serve with rice and garnish.
