Rainbow Fruit Basket

I have made this many times and it is a nice favorfull salad. You can use all types of fruit so you do not have to limit the salad to these fruits and you can take out some.

1 medium honeydew or cataloupe
1 ripe papaya
1 small pineapple
1 pint ( 2 cups) strawberries
1 cup apple juice
!/2 cup sugar
1 large stick cinnamon
4 whole cloves
!/2 cup apricot or peach brandy ( or juice)
Rind of 1 lemon cut into long strips

Chill fruit for at least 4 hours.

Combine the apple juice, sugar, cinnamon stick and cloves in a small saucepan. Simmer 5 minutes. Remove from heat; pour into a glass bowl, add brandy and lemon rind strips. Let stand at room temperature.

Make a basket from a melon.

Pare and dice melon; halve ,seed and pit papaya; dice in bowl; slice , pare and dice pineapple into bowl; hull and half strawberries. Pour cooled syrup over the fruits. remove the spices. Chill 1 hour.

To serve pile fruit into melon basket.
