Microwave Corn Beef Hash with Fried Eggs

This is easy and fast. It can be for breakfast or another meal.

For two people you will need:

12 oz corned beef (leftovers or canned)
3 small potatoes, peeled and cut into cubes
2 to 4 eggs
butter or margarine
Sliced French or Italian bread

If you use corned beef in the can you will have to deal with the key. I almost always have issues with opening it but tonight they came right open. Be careful after opening with the sharp side of the can. It will cut you up if you are not careful. I carefully shake it above a cutting board to pop the beef out and avoid dealing with the sharp edge.

Put the cubed potatoes into a microwave safe dish. Put 1 tablspoon of butter or margaine on top. cover with a paper towel. Microwave on high for 3 minutes. After the three minutes carefully sir the potatoes and microwave another 2 minutes or until the potatoes are soft. Carefully stir the corn beef in with the potatoes and microwave for another minute. The corn beef is already cooked so you are only warming it up.

Butter the bread slices and put in broiler. Make sure you watch this bread carefully because it will burn if you are not careful.

Fry eggs or scramble.

Put the corn beef and has on the plate and put the egg(s) on top. Put the toast on the side. Walla, quick and fast corned beef hash.
