This pictured is a Basmati Rice Sald prepared with Blueberries and Raspberries,. This salad can also be made with any combination of fresh pineapple, strawberries, papayas, bananas, raspberries, kiwifruit, persimmons, pears, mandarin oranges, and mangos. What a delighful and simple salad.
Ingredients:
3 cups room temperture cooked basmati rice
2 cups cold heavy cream
1 teaspoon pure vanilla extract
3 cups chopped or sliced ripe fruit
Put the rice into a large serving bowl.
Whip the cream an dvanilla together with a mixer at high speed until soft peaks form. Fold the whipped cream into the rice. Add the fruit, Cover and refrigerate for a few hours.
