Bumbleberry Pancakes


Bumbleberry Pancakes use two berries for a wonderful flavor. It is great with maple syrup or you can use a fruit flavored syrup.

2 cups pancake mix
3/4 cups sour cream
1 -1 1/2 cups milk
1 egg
1/2 cup fresh or frozen (thawed and drained) raspberries
1/2 cup fresh or frozen (thawed and drained) blueberries

Heat griddle or skillet; grease or spay on oil if necessary.
Stir all ingredients except berries in large bowl. Some lumps are okay you do not want to over stir. Stir in berries gently. Pour batter of about 1/4 cups onto hot griddle. I use a ladle to do this.

Cook until edges are dry, turn: cook until golden.

Serve with syrup.
