BBQ Chicken


When You BBQ Chciekn you have to be careful of overcooking, There are two methods to grill the chicken direct heat or indirect. When you cook with direct heat you put the meat over the coals or flame. With indirect heat you have the heat source to the side which is much like baking in the oven. The direct heat works best with bonesless chicken breasts but I perfer indirect heat for cooking chicken. If you are planning to use BBQ sauce you should wait until the last 10 minutes or so of cooking. Using a instant reading temperture gauage is also very helpful.

The chicken shown above was cooked on a gas grill with only one side of the burners on so it was cooked with indirect heat.
