Days 10 through 14, Getting the starter build up

The next three days you will be feeding 3 times a day. to get it ready for baking. After five day you will keep the feeding schedule to keep the culture in shape.

You must watch the starter and make sure it does not starve. Don't miss a feeding.On days you do not make bread you can reduce the feedings but three days before you are going to bake you want to go to three times a day.

First feeding:

1 cup warm water
1 1/4 cups unbleached white bread flour
2 cups starter

Stir together

Second feeding: 4 to 6 hours later

2 cups warm water
2 1/2 cups white bread flour

Third feeding: 4 to 6 hours later

4 cups water
5 cups unbleached white bread flour

The next day repeat the feeding. You must pour off except 2 cups.

Stir in water and flour
