Pot Roast ala Coffee-American Amish/Mennonites


This is a way to be thrifty with that leftover coffee from breakfast. Using coffee gives this roast a very nice flavor.

5 pounds Swiss Steak, trimmed of fat
1 tablespoon vegetabe oil
1/4 cup soy sauce
1 cup coffee, regular or decaffeinated
2 bay leaves, crumbled
1 garlic clove, finely minced
1/2 teaspoon onions, sliced
Additional coffee and soy sauce, as needed

Preheat oven to 300 F. Heat oil in a heavy skillet over high heat and sear both sides of the roast.

In a large roasting pan , combine the soy sauce, coffee, bay leaves, garlic, oregano and one of the onions. Transfer the roast to the pan. Top with second onion. Cover and bake for 3 1/2 to 4 hours, basting every hour. If liquid begins to boil away add more.

Cut in thin slices and serve with hard rolls with the pan juices in a little bowl on the side as a French dip sandwich.
