Rainbow Kabobs & Cake

Rainbow Kabobs

Assorted fruit in the colors of the rainbow:

Red - watermelon balls, strawberries, or cherries
Orange - orange sections, cantaloupe balls, mango, or papaya
Yellow - pineapple cubes or banana slices
Green - green grapes, honeydew melon balls, or kiwi fruit slices
Blue - large whole blueberries
Purple - purple grapes or cubed plums

Place fruit on skewers in order listed to make a rainbow.


Rainbow Cake

1 package cake mix plus ingredients to prepare cake
1/3 cup raspberry or other jam
1 container vanilla frosting (16 ounces) or make your own favorite
Multicolored coated fruit candies (at least 5 different colors)

Prepare cake and bake in 2 8-inch round cake pans according to package directions. Cool in pans on wire racks 15 minutes. Remove from pans to wire racks; cool completely.

Place 1 layer upside down on serving plate. Spread jam on top. Add second layer. Frost entire cake with frosting.

Position the candies like a rainbow across the cake
