Curried Peas and Potatoes (Mattar Ahu Karl)

2 tablespoons ghee or oil
2 1/2 teeaspoons ginger root, chopped
2 1/2 teaspoon garlic, chopped
1/2 cup onion, chopped
1/4 teaspoon salt
1 teaspoon ground cumin
1/2 teaspoon turmertic
1/8 -1/4 teaspoon ground red pepper
3 medium tomaotes, chopped
1 1/2 tablespoons cilantro, chopped or ground coriander
1 large potato
3/4 cup water
3 cups frozen peas

In a medium saucepan, heat the oil or ghee,
Add and saute the ginger, garlic , onion and salt.
When onion s are brown add the cumin, turmeric and ground red pepper
Stir in tomatoes and cilantro
Add potato and water. Stir well. Bring to a boil, covered, 10 minutes.
Add peas
Simmer 5 minutes or until potatoes and peas are tender. Garnish with Cilantro or gram massala(optitonal)

Serve with rice as main dish or with a curry meal.
