Shish Kabob and Cacik (Minted Cucumber and Yogurt Salad)


Tonight was Skewered Lamb and Vegetables (Shish Kabob)., I only used onions this time, Rice Pilaf made from the Near East Brand, Minted Cucumber-and-Yogurt Salad (Cacik), and a Tossed Salad with choice of dressing. Cicik is usually served "American style" in Turkey-in separate salad plates along with the main dish.

Minted Cucumber-and-Yogurt Salad
(Cacik)

4 servings

1 cup unflavored yogurt
2 tablespoons finely snipped fresh mint or 1/2 teaspoon dried mint flakes
1 tablespoon lemon juice
1 clove garlic, finely chopped
Dash of white pepper
1 medium cucumber, thinly sliced

Mix all ingredients except cucumber; cover and refrigerate. Just before serving, stir in cucumber. Place in serving dish; garnish with additional mint if desired.
