Cucumber and Tomatoes in Yogurt

This dish from Northern India is good served with Curry chicken, Chicken with Golden Pilaf and Balti Chicken Pasanda

6 servings

2 medium cucumbers
2 green onions 9 chopped)
1 teaspoon salt
2 tomatoes chopped
1/2 clove garlic, finely chopped
2 tablespoons cilantro or parsley chopped
1/2 teaspoon cumin
1/8 teaspoon pepper
1 cup unflavored yogurt

Cut the cucumbers lengthwise into halves , Scoop out seeds, chop cucumbers . Mix with green onions and salt; let stand 10 minutes. Add tomatoes. Mix remaining ingredients except yogurt; toss with cucumber mixture, thoroughly. Just before serving mix in yogurt.
