Broccoli In Oyster Sauce- Hao You Xi Lan

Vegetarians may want to use soy sauce rather than oyster.

Serve 4

1 pound broccoli
3-4 tablespoons vegetable oil
1/2 teaspoon salt
1/2 teaspoon light brown sugar
2-3 tablespoons stock or water
2 tablespoons oyster sauce

Cut the broccoli heads into florets; remove the rought skin form the stalks and diagonally slice the florets into diamond shaped chunks.

Heat the oil in a preheated wok and add the salt, then stir-fry the broccoli for about 2 minutes. Add the sugar and stock or water and continue stirring for another minute. Finally add the oyster sauce, blend well and serve.
