Khomani Ka Metha (Apricot Dessert)-Pakistan
About 4 Servings
1 pound fresh apricots
30 ounces water
1 cup sugar
2 ounces blanched shopped almonds
whipped Cream
Place apricots in saucepan with enough water to cover. Place pan over low heat and cook the apricots unto they become very soft, about 15 minutes. Disolve the sugar in the remaining water and bring to a boil and boil until it reduces to 2/3 of its original quantity. Transfer apricots to a food processor and process to a puree. Add apricot puree to the sugar mixture and mix well . Place into serving dish and decorate with almond and chill. Serve cold with whipping cream.
