Fried Rice- Com Chien



Vietnam Fried Rice turns leftover rice and vegetables into an attractive, tasty meal. You can use other vegetable other than peas and use any kind of meat. I used sausage in the rice pictured above. You can also make in vegetarian by omitting the meat and adding more vegetables. Fried rice works best if the leftover rice is cold

3 cups leftover rice
3 tablespoons oil
1/4 -1/2 pound cooked or raw meat, cut into thin strips
3 cloves garlic, minced
1 large onion, chopped coarsely
1/4 teaspoon pepper
1 teaspoon sugar
1 tablespoon soy sauce
1 tablespoon fish sauce (optional)
1 cup leftover peas
2 eggs, beaten

Heat oil in large frying pan
Add meat and garlic, onion, sugar, soy sauce. Stir-fry until meat is tender and hot 1-2 minutes.
Add rice and stir fry 6 minutes, stirring constantly.
Add peas and stir well
Push rice mixture to one side and add eggs to the side without the rice. Cook the eggs and then mix with the rice.

Serve hot.
