Corn Tortilla Chips with Melted Cheese (NACHOS)
Nachos are not truly Mexican, they are perhaps Tex-Mex or most likely gringo-Mex; they are more popular in the US than in Mexico. They are now usually on the menu in Mexican restaurants because people expect them to be on the menu. Maybe they should be called "Ball Park" food.
Corn Tortilla Chips with Melted Cheese
none
4 cups corn chips
16 oz longhorn or cheddar cheese, shredded
6 fresh anaheim chilies, roasted
3 large tomatoes, chopped
1 cup olives, chopped
1 cup avocado chunks
jalapeno rings
chopped onions
diced red or green bell pepper
sour cream
refried beans
Preheat the oven to 400°F (205°C) Arrange the chips, overlapping slighlty
in a pizza pan or cookie sheet. Sprinkle evenly with the cheese, Chile and
tomatoes. Bake for 5 minutes or until cheese melts. Garnish as desired
before serving.
