Arab Garlic Fried Potatoes-Batat Makquliya ma` Thoom-

4-6 servings

5 large potatoes ( 2 pounds)
vegetable oil for frying'
1/2 head garlic, peeled and crushed
4 tablespoons finely chopped coriander
1 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoons cayenne
2 tablespoons butter
1 lemon, cut into wedges

Peel and dice potato into 1/2 inch cubes. Place oil in sauce pan up to 2 inches in depth and heat to medium high. Fry potato cubes until they barley begin to brown, then drain on paper towels.

Combine the remaining ingredients , except butter an lemon in a bowl, add potatoes and set aside. Melt butter in frying pan and stir -fry potatoes or 2 to 3 minutes. Place on a seving platter. an dgarnish with lemon wedges. Serve hot with lemons to squeeze on potatoes.
