Easy and Fast Chicken and Rice
Yesterday was another very busy day and I had to substitute from my meal plan another dish. I choose this recipe to make a quick meal. I had a whole chicken which I used instead and took a little looker to cook.
Prep/Cook time 15 minutes-4 servings
Chicken and Rice
1tablespoon cooking oil
4 chicken breasts
1 can (10 3/4 ounces) condensed cream of chicken soup, Fat Free
1 1/2 cups water
1/4 teaspoon paprika
ground pepper
2 cups uncooked instant rice
2 cups frozen or fresh broccoli
Heat oil in skillet. Put in chicken and brown( about 5 minutes). Remove chicken and set aside. Add water, soup, paprika and pepper. Bring to a boil. Stir in rice and Broccoli. Add chicken and lower to a simmer. Cover and cook for 5 more minutes or until chicken is cooked.
