Have 10 potatoes on hand
Have salsa on hand in freezer(3-4 cups)
2 cups yogurt
Cooked red or black beans or any cooked beans, on hand in freezer
Store salsa and cooked beans in seperate plastic ziploc bags in freezer. To serve, bake potatoes in oven in skins 40 minutes or until soft. Thaw beans and salsa. Heat beans through. Slice potatoes down center; spoon beans, salsa and yogurt over potatoes.
