Polvorones (Crumb Cakes)



3 1/2 cups + 1/3 cup flour
powdered sugar
4 egg yolks
1 teaspoon of grated lemon rind
1 3/4 cups shortening
1 teaspoon baking soda
1 3/4 cups of sugar

Mix the flour, shortening, baking soda, sugar, egg yolks, and grated lemon rind in a bowl. Knead with your fingertips to mix all the ingredients.
Spread the dough on a floured board and cut the dough with a round cutter or a glass to form circles. Place in the oven pre-heated to 350 degrees F, and bake until the dough is golden. Remove from the oven. Sprinkle the cakes with powdered sugar while still warm.
