Carrot and Raisin Salad

This is an old favorite that has been updated.


Carrot and Raisin Salad



3 cups grated carrots (approximately 5 large)
1 cup chopped celery
2/3 cup seedless dark raisins
1/2 cup coarsely chopped pecans
2 tablespoons chopped fresh parsley
3/4 cup plus 2 tablespoons mayonnaise
1 tablespoons sugar
1 teaspoon grated orange rind
1/2 teaspoon salt

In a large bowl, combine all the ingredients in the order given, toss lightly with a fork. If desired, serve on individual plates stop a bed of Bibb lettuce leaves.
