LAMB CHOPS WITH ARTICHOKES

LAMB CHOPS WITH ARTICHOKES, originally uploaded by Lakenvelder.

I have not made lamb in a long time mostly because good cut are a bit difficult to come around here. The last time I purchase some lamb it was very bad. I found these the other day at the grocery stone and they looked good. You will find this recipe very easy and a nice recipe that add to the flavor of the lamb.

Lamb chops ( i had 4 large ones)

I marinaded them for 1 hour in this marinade which I just mixed together but these are the approximate amounts.

INGREDIENTS:

2 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon soy sauce
salt as needed
pepper, as needed

Make the artichoke and zucchini Sauté

INGREDIENTS:

3 tablespoons finely chopped onion
1 teaspoon minced garlic
2 tablespoons olive oil
1 zucchini, cut into julienne pieces
1 tomato chopped into pieces
1 can artichoke bottoms or 5 cooked artichoke bottoms, sliced
salt, as needed
pepper, as needed

Sauté the onion and garlic in the oil. Add the zucchini and sauté for 3 to 4 minutes or until moisture form the zucchini has cooked away.
Add the chopped tomatoes and artichoke, Continue to sauté until hot, 3 to 4 minutes. Season with the salt and pepper.

Prepare the chops:

Cook the lamb on a grill or broiler unit done to the desired doneness. 135°F/63°C for rare up to 170°F/75°C for well done.

Serve the chops on a bed of the artichoke mixture, Garnish with artichoke leaves if you used cooked artichokes.
