Fried Apples

I had some apple to use up and was deciding what I would make with them. A number of regular ideas came to my d such as pie, or fritters. Then I remembers fried apples. We were having the brisket for dinner so I figured it will go with it nicely and it did. What a perfect accompaniment to the brisket! The recipe called for Johnathan apples and I had golden delicious which is another good cooking apple. So here we go! Very easy change of pace recipe.

1/4 cup butter
6 cups slice , unpeeled Johnathan apples (I used golden delicious)
2 tablespoons granulated sugar
3 tablespoons brown sugar
1/2 teaspoon lemon rind
1/4 teaspoon salt

Melt the butter in a large, heavy skillet. Add the remaining ingredients and cook over medium-low heat for 10 minutes. As they are cooking turn with a spatula very carefully.

Serves 4 -6
