2 tablespoons oil
1 (5 to 7-pound) chuck roast
2 tablespoons all-purpose flour
2 medium onions, sliced
1/4 teaspoon salt
1/4 teaspoon black pepper
1 (6-ounce) can tomato paste
Preheat the oven to 300 F. Heat the oil in a large frying pan over medium-high heat. Lightly flour both sides of the roast and quickly sear it. Set aside the roast and transfer any reamaining oil and crackinlings to a roasting pan. Place the sliced onions in the bottom of the pan. Season both sides of the roast with salt and pepper and place it in the roasting pan on top of the sliced onions. Last, but not least, spread the top of the roast with the tomato paste. Tightly cover and roast for 3 to 4 hours.
