2 Tablespoons vegetable oil
2 Tablespoons butter
2 medium onions finely chopped
3 cloves garlic, finely chopped
1/2 green bell pepper, chopped
1/2 red bell pepper chopped
4 ounces fresh mushrooms, wiped clean and sliced
salt
Freshly ground pepper
4 boned, skinned chicken breasts, diced in 1/2 inch squares
3 tomatoes, seeded and diced
1 teaspoon tomato paste
1 teaspoon red bell pepper paste
3 mediun potatoes, peeled and diced small
1 teaspoon thyme or oregano
In a 3-quart pot heat the oil and butter. Saute the onions, garlic and bell peppers, stirring over medium heat for 2 minutes. Add the mushrooms, salt and pepper to taste, and cook, stirring for 2 to 3 minutes. Add the chicken and cook stirring for 6 minutes.
Add the tomatoes, tomato paste, bell pepper paste and 23 cups water. Stir and mix well. Cover and cook for 15 minutes , stirring occastionally.
Add the potatoes and 1 to 1 1/4 cups water, thyme or oregano.. Mix well. Cover and cook, stirring occasionally., for 20 minutes.
Remove from heat and serve. It is wonderful served with rice and a green salad.
