Welsh Rabbit- microwave

This British cuisine is also know as cheese on toast or Welsh rarebit. It is not certain how the name Welsh Rabbit came about but it is suspected it is the result of a slur. It was common in the 17th and 18th century to called something Welsh to mean it is something of inferior quality or a substitute. This is an easy variation to the dish using process sharp cheddar cheese. and the microwave. I used now-fat milk.

1 1/2 teaspoons butter or margarine
2 cups shredded pasterized process sharp cheddar cheese (Velveeta)
1/4 teaspoon Worcestershire sauce
1/4 teaspoon dry mustard
Tiny amount of cayenne pepper
1/3 cup milk

Melt the butter or margarine in a 1 quart dish in the microwave oven for 15 seconds.

Add cheese and heat for 1 minute or until it starts to melt, stir after 30 seconds.

Add Worcestershire sauce, mustard and pepper. Add milk gradually, stirring constantly.

Heat 1 1/2 minutes to 2 1/2 minutes; stir occasionally.

Serve immediately on hot toast.
