It was common in the 17th and 18th century to called something Welsh to mean it is something of inferior quality or a substitute. This is an easy variation to the dish using process sharp cheddar cheese. and the microwave. I used now-fat milk.

1 1/2 teaspoons butter or margarine
2 cups shredded pasterized process sharp cheddar cheese (Velveeta)
1/4 teaspoon Worcestershire sauce
1/4 teaspoon dry mustard
Tiny amount of cayenne pepper
1/3 cup milk

Melt the butter or margarine in a 1 quart dish in the microwave oven for 15 seconds.

Add cheese and heat for 1 minute or until it starts to melt, stir after 30 seconds.

Add Worcestershire sauce, mustard and pepper. Add milk gradually, stirring constantly.

Heat 1 1/2 minutes to 2 1/2 minutes; stir occasionally.

Serve immediately on hot toast.
