July 23, 2006 Chicken and Broccoli

I make a recipe similar to this called Chicken Divan using the regular oven. This recipe is a very nice microwave version. I liked the addition of the chestnuts but I think I will leave out the cashews and have them on the side for people to sprinkle on if they desire. I am planning on playing with this recipe by using yogurt instead of the mayonnaise next time and see what happens. We had parsley potatoes, corn on the cob and peach jello with this.

Ingredients:

2 packages of frozen broccoli (10 oz.)
3 chicken breasts cooked and cut into bite size pieces
1 can (101/2 oz.) condensed cream of chicken soup
1/2 cup mayonnaise
1/2 cup milk
1/2 cup shredded cheddar cheese
1 can (6 oz.) water chestnuts, drained and sliced
1 teaspoon lemon juice
1/2 teaspoon curry powder
1/2 cup cashews
1/2 cup bread crumbs

Place broccoli in 2 quart baking dish. Microwave for 6 to 8 minutes stirring halfway through cooking time.

Place chicken pieces on top.

Mix together the remaining ingredients, except the bread crumbs, and pour over the top of the chicken and broccoli. Sprinkle bread crumbs on top.

Cook for 10 to 12 minutes , rotaning one quarter turn halfway thrjough cooking time.

Rest, covered 10 minutes before serving.
