Sookhe Aloo (Dry Potatoes)

Other than the time to peel the potatoes this is a very fast and easy recipe.
This is a great recipe if you have more guests than expected arrive for dinner. I got the potaotes peeled and ready by placing them in cool water and then made the other food. Before the entree was done I sliced the potatoes and started them.

DSCF0010Ingredients for Sookhe Aloo (Dry Potatoes)

4 medium potatoes, peeled and cut into 1/2" slices, then cooked
1 teaspoon salt
1/2 teaspoon mustard seeds
1/4 teaspoon cayenne
1 teaspoon cumin
2 teaspoon mango powder
4 tablespoons oil
1/2 teaspoon garam masala

Heat oil until it is very hot, then add cumin and mustard seeds. Stir for 15 seconds. Add potatoes and fry until they are golden brown. Add remaining ingredients and stir 2-3 minutes more. Remove from oil with slotted spoon.
