What you need:
Scale
Rubber Spatula, optional
1/2 pound (about 1 cup) lukewarm water, 78 degrees F
4 ounces (about 1 cup) unbleached white bread flour
It may be a brownish purple color by now and will not smell that great. The bag of grapes should be deflated and you might have some bubbling.
To finish the culture you need to feed it or bacteria will over take the yeast. What you want is a balance of yeast and bacteria. The flour will give the culture the needed sugar to grow and the added water will give the correct consistency. Add the flour and water, mix and swish the grape bag again. Cover and secure the mixture as before.
You could make bread with this mixture right now but you really want it to get developed so you get the great sourdough taste.
