Spicy Meat Loaf (Lagan Ki Seekh)
























5 eggs
1 pound lean ground beef
2 tabslpoons finely ground ginger
2 tablespoons finely ground garlic
6 green chilies, chopped
2 small onions, finely chopped
1/2 teaspoon turmeric
2 oz. coriander leaves, chopped
6 oz potato grated
salt, to taste

Preheat the oven to 180C/350F. Beat 2 eggs until fluffy and pour into a greased loaf pan.

Knead the meat, ginger and garlic, chilies, 1 chopped onion, 1 beaten egg, turmeric, coriander leaves, potato and salt. Pack into the baking tray and smooth the surface. Cook for 45 minutes.

Beat the remaining eggs and fold in the remaining green chillies and onion. Remove the baking tray from the oven and pour the mixture all over the meat. Return to the oven and cook until the eggs have set.
