Winter's Day Chili Soup

This is a very easy soup that serve 15. You can use ground beef, sausage or chorizo which is what I used in the picture. It only takes about one half an hour to prepare.


1 cup chopped onion
2 pounds bulk sausage (I used Homemade beef chorizo and left out the chili powder and red peppers)
2 quarts tomato juice
1/2 cup firmly packed brown sugar
3/4 teaspoon chili powder
1/8 teaspoon red pepper flakes
Salt
6 cups water
4 rounded tablespoons cornstarch
4 cups cooked kidney beans

In a skillet saute the sausage and onion until browned. Drain the grease and place the onion and sausage into a 6 quart kettle with the tomato juice, brown sugar, chili powder, red pepper, salt to taste and 4 cups water. Heat over medium until boiling. Dissolve the cornstarch in the last 2 cups water. Add the cornstarch mixture to the kettle and stir until thicken. Add the beans. Cook for 5 to 10 minutes, until the beans are heated. Serve warm.
