Stuffed Peppers (Punjana Paprika)



This is made in Croatia and Serbia. It can be made with green , yellow or red peppers.


2 1/2 cups water (or enough to cover peppers)
1/2 cup tomato paste
1 teaspoon salt
1 tablespoon sugar
3 tablespoons olive oil
2 tablespoons flour
2 tablespoons paprika

Mix together for sauce. Reserve 1/4 cup for stuffing and put remaining into saucepan


Stuffing:
1 pound ground beef
1 onion, chopped
1 egg
1 1/2 cooked rice
2 cloves garlic
several sprigs parsley
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup reserved sauce

Stuff into
8-10 sweet peppers, seed removed
Fill peppers 2/3 full with the mixture. Place in sauce and simmer for 2 hours.
