Plaited Bread


I found this Bulgarian recipe on a Bulgarian web site and I worked on the recipe to make it easier to understand and put into American measurements. The directions did not say to let it rise before shaping but I did to make a lighter bread.


Plaited Bread

1 kg four (6 1/2 cups)
3 eggs
1 tablespoon sugar
60 g butter (4 teaspoons)
1 tablespoon yeast
Salt to taste
Water

Put the flour in a large bowl, add the yeast dissolved in some water, the eggs (one without the yolk but set aside for top), salt and water to make a dough. Knead and place in a greased bowl covering the top with oil or cooking spray. Let rise until double in bulk. Punch down and divide into three even balls.

Roll the three pieces (I made them 4 x 16 inches.) into a rectangles, butter and roll up each one of them. so they are 16 inch long rolls.

Plait the three rolls and shape them into a circle on a buttered baking dish. Let it rise until double.

Brush on the reserved yolk with about 1 teaspoon water mixed with it and bake in a 350F oven.

It will be done when it is brown on top and makes a hollow sound when tapped.
