Making your own Corned Beef (non chemical method)


If you want the red corned beef this recipe will not work for you. It is a corned beef recipe without the chemicals and produces a regular meat looking meat but is still a great recipe. If you make your own corned beef you can get a less fatty entree but you need 36 hours. I use a large plastic bowl that has a cover and make sure all the meat is cover with brine. You can also make it in ziplock bags.

8 cups water
1 cup salt
1/4 cup sugar
1 bay leaf
6 peppercorns
1 clove garlic, minced
1 tablespoon whole picking spices
5-6 pound round roast, brisket or you really can use any type of meat including game.

Mix water, salt, sugar, bay leaf, peppercorns, garlic, pickling spice and beef in crock, cover with a plate and put a weight on top. Let meat stand in brine 36 hours.
