Chicken Biryani (TAVUK BURYAN)


Biryani is a rice dish from the Indian subcontinent, especially the Pakistan region. It is usually made with a mixture of spices, basmati rice, meat and yogurt. It would be considered a casserole in the United States. This is a Turkey version of Chicken Biryani the does not use yogurt or spices.

Place the rice in a bowl, cover with cold slated water, mix well and let soak for 20 minutes. Drain well.

Preheat oven to 400F.

Melt the butter in a pot, saute the onion, stirring over high heat for 3 to 4 minutes. Add the rice and cook, stirring for 3 minutes, add the chicken, stir to mix well, and cook for 2 minutes. Add the chicken stock, stir to mix well, pour into an ovenproof casserole. Cover and bake for 12 to 15 minutes.

Remove the casserole from the oven and let sit, covered, for 30 minutes.
