Simple Rice Pilaf
You can be a be as creative as you want or make it very simple.
If you want other flavors you can add toasted nuts, raisins, sauteed
mushrooms, green peas, carrots or chopped fresh herbs. This can be cooked
in a oven but I put mine in a rice cooker. When you get to the part to add water and broth I just put everything in the cooker and cook at normal white rice setting.
Simple Rice Pilaf
Side Dish
2 tablespoon unsalted butter
1/2 cup chopped onion
1 cup long-grain white rice
1 cup reduced-sodium chicken broth
1 teaspoon Salt
Position rack in center of oven and preheat oven to 350 degrees F.
In a medium saucepan, melt the butter over medium heat. Add the onion and
cook, stirring until soft. About 3 to 4 minutes.
Add the rice and any other ingredients, stirring until rice is opaque and
nutty in aroma.
Add water and chicken broth, and salt and bring to boil.
Cover pan with a tight -fitting lid. Using oven mitts or pot holders
transfer to oven and bake until the rice is tender and the liquid is
absorbed, about 25 to 30 minutes.
Remove from oven and let sit for 5 to 10 minutes.
Fluff the rice with a fork and stir in the scallions, if desired and Serve
hot.
Yield: 6 servings
