CON QUESO

If you use mild peppers this should be yummy for most folk. If you do not like pepper just omit them. If you like it hot add chillies labeled medium ot hot.

2 tablespoons vegetable oil
1 cup yellow onion, chopped
1 teaspoon seasoning salt
1 cup chopped seeded tomatoes
1 teaspoon garlic minced
8 ounces white cheddar cheese, shredded
8 ounces jack cheese shredded
1 cup canned, chopped mild green chilies
3 tablespoons sour cream
1 teaspoon white pepper
1/2 teaspoon salt , to taste
Tortillas chips


Heat the vegetable oil in a medium saucepan over medium heat until hot, about 1 minute.

Add the onion and seasoning salt and cook , stirring until soft, about 5 minutes

Stir in tomato, if using and garlic and cook stirring for another 2 minutes.

Reduce the heat to medium low and add the cheese and chilies. Cook, stirring constantly until the cheese melts, about 2 minutes.

Stir in the sour cream, white pepper, and salt.

Serve immediately with tortilla chips.
