Dutch Hussar's Salad-Dutch


I used roast beef and green beans instead of peas in the above salad.











2 cups diced cold cooked beef, veal or pork
2 cups cold cooked potatoes
1 medium size onion, sliced
2 hard cooked eggs, chopped
1/4 cup salad oil
1 teaspoon dillweed
1/2 teaspoon pepper
About 3/4 cups mayonnaise
1 cup cold cooked peas
2 tablespoons sweet relish
1 medium sliced apple, diced
2 tablespoons vinegar
1 1/2 teaspoons salt
Letturce
1 medium tomato, peeled and sliced
3 tablespoons chopped fresh parsley

Instructions:

1. Combine the meat, potatoes, peas, onion, relish, eggs and apple in a large bowl.
2. Mix oil, vinegar, dillweed, salt and pepper.
3. Add to meat mixture.
4. Refrigerate 1-2 hours to blend flavors.
5. Arragne lettuce on platter. Top with meat vegetable mixture.
6. Cover with thin coating of mayonnaise.
7. Garnish with tomato slices and parsley.
