Cre`me Caramel

The Creme of Hearts is an idea for you Sweetie for Valentine Day.

1 1/4 cups sugar, divided
4 tablspoons water
1 3/4 cups milk
1 cup heavy cream
5 eggs
2 egg yolks

Preheat oven to 325 degrees F. In a heavy bottom saucepan mix 3/4 cup sugar and the water. Swirl to dissolve the sugar and water over medium to caramelize. Do not use a spoon. It will take about 3-5 minutes to become golden brown. Pour into an ungreased shallow dish (heart shape ramekins or a 9-inch pie plate. and coat the base with caramel by tipping the dish. Pour the milk and cream into a saucepan. Split the VANILLA BEAN with a sharp knife, scrape out the seeds and the pod to the saucepan. Heat the milk, cream and vanilla to a boil. Remove from the heat, then leave to infuse for 15 minutes. in a separate bowl whisk the eggs, yolks and remaining sugar until smooth. Add the vanilla/milk mixture to the egg mixture and stir to combine. Strain inot the caramel lined baking dish and bake in a water bath for 40-50 minutes until the eggs are set. Remove from the oven and water bath and chill overnight before serving. To serve ,loosen the edges and invert onto a serving plate and let the caramel pool around the dessert.
