3 cups raw peanuts or other nuts
1/2 teaspoon salt
2 cups sugar
1 cup corn syrup
1 cups water
3 tablespoons butter
1 teaspoon lemon extract
Sprinkle nuts with salt and warm in oven. Put sugar, corn syrup and water into pan. Stir until it begins to boil, wash down sides with set pastry brush and cook to 295 degrees F. Add butter, lemon extract and nuts, pour into shallow buttered pan. As soon as it can be handled turn the mass over and pull and stretch as thin as possible. Break into irregular pieces.
